ascorbic acid (vitamin C) is a water-soluble vitamin, which is reduced in many oxidation biological reactions. Some biological functions of Ascorbic acid have been clearly defined, including collagen, carnitine, catecholamine, tyrosine, corticosteroid and aldosteron. Vitamin C also participates as a reducing agent in the enzyme metabolic system with Cytochrome P450.
The activity of this metabolic enzyme system will be reduced without vitamin C. Vitamin C also regulates absorption, transportation and storage of iron. Vitamin C is an effective antioxidant protection by immediately removing oxygen, reaction nitrogen (ROS, RNS) such as hydroxy, peroxyl, superoxide, peroxide and nitroxide, free oxygen and hypochlorite, which are free radicals that are toxic to the body.Daily needs through a diet requires about 30–100 mg of vitamin C for adults.
